woohoo~ chinese new year is just two weeks from now.. it's about the time for me to learn baking again.. wahaha, i have not bake for almost one year since this year cny for my butter cakes.. :p
today, my "assignment" is to bake two cookies, pineapple cookies & kuih momoo (both mum & sister favorite)..
pineapple roll cookies' recipe:
ingredients:
1. 250g butter
2. 60g icing sugar (or 2oz)
3. 270g flour (or 9oz)
4. 100g corn flour (or 3oz)
5. 2 tablespoons of milk powder
6. abit salt
7. 1 egg
8. ready made pineapple jam
steps:
1. beat butter & sugar till fluffy
2. put in egg, stir well
3. add in flours (no. 3 to no. 6), mix well by hand till it becomes firm and non-stick dough (p/s: may add some flour or corn flour if it's too watery) - do not mix too long and too hard...
4. put mixture into the mould, press out into strips, put in jam and roll it softly
5. bake in preheated oven at 180c, for 10 mins, take out and put some egg yolk on its topping, and bake for another 10-15mins (estimated) or till it turns to golden brown
6. here the yummy pineapple cookies are ready to serve... =)
for kuih momoo, the ingredients and methods are the same, just the shape is round, without jam and mix with icing sugar after it's baked~
i feel great and fun~ because i learned new things and it tastes yummy~ a big thank you to my dearest aunties for everything... =)
